Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods held refrigerated for more than 24 hours were not properly date marked. Observed hotdogs in Silver king refridgerator dated open on 5/5 discard on 5/12 past the 7 day date mark.
To prevent foodborne illness, refrigerated, ready-to-eat, TCS food held at a temperature of 41°F or less for more than 24 hours shall be clearly marked at the time of preparation or the time the original container is opened to indicate the date or day, that is a maximum of seven days, by which the food shall be consumed, sold, or discarded. The day the food is prepared or opened is day one. Educated on date marking, had PIC correct to proper discard date of 5/11.

Repeat Corrected During Inspection Observed sponges being used to clean food contact surfaces. Observed sponge present at 3-comp sink.
To prevent pathogen harborage and illness, sponges may not be used in contact with cleaned and sanitized or in-use food contact surfaces. PIC threw sponge away.

Critical Corrected During Inspection Food equipment surfaces are not cleaned at the required frequency. Observed inside of far right ice holder to contain mold on inside.
Equipment food-contact surfaces and utensils shall be cleaned at a frequency specified in this rule. Clean inside of ice machine when ice may not be contaminated. Instructed
