Critical Corrected During Inspection PIC did not ensure employees are properly maintaining temperatures of TCS foods during hot and cold storage. Veal patties in hot holding had an internal temperature of 72F. PIC stated they had been out for 1.5 hours and voluntarily discarded less than 1lb.

Critical Corrected During Inspection PIC unable to demonstrate knowledge of temperatures and times for safe refrigerated food storage, hot holding, cooling and reheating. PIC unable to state the correct times and temperatures needed for safe cooling. Handout provided and education provided at time of inspection.

Corrected During Inspection Employee eating, drinking, or using tobacco in non-designated area. Partially consumed meal observed on prep table with no food out.. PIC had removed at time of inspection.

Handwashing sink water below 100°F. Hand sink by prep table had temperature of 92F. Please have repaired by re-inspection.

Critical Corrected During Inspection Handwashing sink not accessible. Two containers observed in hand sink by pots and pans storage. PIC moved at time of inspection.

Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Juice dispenser had visible residue and build up. PIC had washed rinsed and sanitized.

Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Can opener blade has visible debris and build up. PIC removed from use to clean and service.

Critical Repeat Corrected During Inspection TCS foods not being hot held at the proper temperature. Veal cutlets had an internal temperature of 72F. PIC voluntarily discarded at time of inspection down disposal.

Critical Presence of live insects, rodents, and other pests. Droppings observed in dry good storage, mop room and behind gas range. PIC has invoice from licensed pest control applicator from 10/22/21. Have areas cleaned. Re-inspection 11/12/21

Corrected During Inspection Can opener blade dull or creating metal fragments. PIC removed from service till blade replaced and unit cleaned.

Non-food contact surfaces of equipment are unclean. Shelving in walk in cooler has visible residue. Please clean by reinspection.

Critical Corrected During Inspection No air gap or approved backflow prevention device on the plumbing system. Coffee machine that states needs backflow does not have one. PIC discontinued use till one is installed.

Corrected During Inspection Outdoor refuse containers without tight fitting lids, doors, or covers. Dumpster lid open and not use. PIC had closed.

Physical facilities not maintained in good repair. Floor by fry station missing tile. Please repair so surface is non adsorbent, smooth, durable and easily cleanable by next standard inspection.

Corrected During Inspection Facility not maintained clean. Floor under fry station had visible residue. PIC had cleaned at time of inspection.

Physical facilities not maintained in good repair. Wall under warewashing unit no longer smooth durable and easily cleanable. Please repair by next standard inspection.

3717-1-06.1(C) / Floor and wall junctures - coved, and enclosed or sealed.
Floor and wall junctures not properly coved or closed and/or floor drains not provided. Floor under warewashing unit and along door to kitchen by warewashing are not coved. Please repair by next standard inspection.

Physical facilities not maintained in good repair. Wall in warewashing area has bare drywall and surface is no longer non adsorbent, smooth, durable and easily cleanable. Please have sealed and repaired by next standard inspection.
