Critical Corrected During Inspection Observed food that was not properly protected from contamination by separation, packaging, and segregation At time of inspection, chicken patties observed uncovered inside Dellwood cooler, CORRECTED, wax paper used to cover chicken.
To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule.
3717-1-04.8(E) / Equipment, utensils, linens, single-service articles, and single-use articles - storage.
Cleaned equipment and utensils, laundered linens, or single-service and single-use articles are not properly stored. At time of inspection, food trays along the food line observed with food contact surface exposed to dirt, dust and splash

Repeat Observed a handwashing sink without water at the required temperature. At timie of inspection, hand wash sink only registered 89 degrees F after ninety seconds of continual flow
To ensure proper cleaning of hands, a handwashing sink shall be equipped to provide water at a temperature of at least 100° F (thirty-eight degrees Celsius) through a mixing valve or combination faucet.

Repeat Observed mops being dried using an unapproved method. At time of inspection, mop observed in the bucket in dining area
After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies.
