Observed cardboard with stains being used as a shelf liner in back dry storage area. Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be smooth and durable. Remove cardboard, may replace with materials that are smooth and easily cleanable, such as plastic, etc.  |

Cleaned equipment and utensils, laundered linens, or single-service and single-use articles are not properly stored. -Observed utensils stored with handles facing down. -Observed glass 11x13 pans and stainless steel pans facing upward. Cleaned equipment and utensils, laundered linens, single-service articles, and single-use articles shall be properly stored as described in this rule. -Ensure handles are properly placed facing upward to protect from touching the utensils where food comes into contact. -Ensure equipment is properly inverted to protect from contamination. |
