Critical Corrected During Inspection PIC did not ensure employees are proplerly maintaining temperatures of TCS foods during hot and cold storage. During inspection, two critical violations for not properly hot holding TCS foods were observed. during inspection CORRECTED,

Critical Corrected During Inspection Handwashing sink not accessible. At time of inspection, cart of bannanas was observed obstructing hand wash station. CORRECTED, listed item was relocated.

3717-1-03.4(F)(1)(a) / Time/temperature controlled for safety food - hot holding.
Critical Corrected During Inspection TCS foods not being hot held at the proper temperature. During inspection, meatloaf sandwich measured at 127 degrees F while on serving line. CORRECTED, listed iitems were removed from food line and reheated to over 165 derees F

Critical Corrected During Inspection TCS foods not being hot held at the proper temperature. During inspection, potato triangles were measured at 119 degrees F while on the serve line. CORRECTED, listed items were removed from serving line and reheated to over 165 degrees F.

3717-1-04.2(I) / Sanitizing solutions - testing devices.
No sanitizer test kit available. During inspection, no test strips for Purell sanitizer could be located.
Please obtain proper test strips for sanitizer in use.
3701-21-25(I) / Person in charge certification in food protection
FSO did not have a person in charge per shift with the person in charge certification in food protection. During inspection, person with only certification was absent today.
Please make sure several employees receive certification traaining in food preparation so that at least one person has PIC training per shift Certificaiton can be obtained on ODH website
