3717-1-06.2(C) / Handwashing sinks - hand drying provision.
Corrected During Inspection No towels or drying device at the handwashing sink(s). Observed no paper towels at the handwashing sink in the warewashing area. PIC had paper towels replaced at time of inspection.

3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.
Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Observed visible residue on the slicer product holder portion of the deli slicer. PIC demonstrated cleaning procedure of the slicer, having all pieces and part cleaned at time of inspection.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed milk in the cooler from 3/22/2023 without datemarking. Ensure any TCS items opened for more than 24 hours is datemarked 6 days plus the day of opening. PIC had datemarked at time of inspection.

3717-1-06.4(K) / Controlling pests.
Critical Corrected During Inspection Presence of rodents. Observed rodent droppings in the dry storage room. Facility has monthly pest control inspections. PIC had room cleaned and sanitized at time of inspection. Continue to monitor the area for further activity, if noticed contact pest control.

3717-1-04.8(E)(1) / Single-service and single-use articles - storage
Corrected During Inspection [52] Improper storage of single-service and single-use articles. Observed single use spoons and forks uncovered and exposed to splash. Ensure single service items are covered to protect from contamination via splash, sneeze, and dust. PIC removed soiled utensils and covered at time of inspection.

3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Nonfood-contact surfaces not easily cleanable. Observed floor/door junction panel to begin to heave and crack,rendering the surface no longer smooth, durable, non-absorbent, and easily cleanable. PIC stated there is a plan in place to have the repair made within the next week. Correct by next standard inspection.

3717-1-04.2(I) / Sanitizing solutions - testing devices.
No sanitizer test kit available. Observed quaternary ammonium test strips to be expired in August of 2017. Obtain valid test strips by 3/31/2023.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Repeat Non-food contact surfaces of equipment are unclean. Observed fan guards in the walk-in cooler and freezer to have visible residue. Clean by 3/31/2023.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Repeat Facility not maintained clean. Observed ceiling tiles in the kitchen to have visible residue accumulation. Clean or replace with smooth and easily cleanable ceiling tiles by next standard inspection.

3717-1-06.4(F) / Drying mops.
Corrected During Inspection Mops dried improperly. Observed mop sitting in the mop bucket. Ensure mops are hung ins such a manner that allows for sufficient airflow to air dry the mop. PIC hung the mop at time of inspection.

Service line handwashing sink was under service at time of inspection.

III - P - Preventing Contamination by Hands: Observed food employee changing gloves when required.
VI - P - TCS Food: Observed hot foods being held at 135°F or above; cold foods being held at 41°F or below.
VII - Protection from Contamination: Equipment food-contact surfaces or utensils are dirty. (See item #52)
V - P - Food from Approved Source: Observed foods being received at the proper temperature, in good condition, safe and unadulterated.
I - P - Employee Health: The operation had an employee health policy on file.
X - P - Chemical: Toxic materials are properly identified and stored.
III - Preventing Contamination by Hands: Observed no towels or hand drying device at the handwashing sink(s). (See item #10)
VI - TCS Food: Ready-to-eat, TCS food that had been date marked was not properly discarded when required. (See item #23)
