Corrected During Inspection Knives, forks and spoons that are not prewrapped improperly presented. Observed clean utensils with the lip portion facing upwards. PIC placed utensils with handles facing upwards during inspection.

3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Nonfood-contact surfaces not easily cleanable. Observed a crack covered with tape on the plastic display case on the front counter. PIC intends to replace display case. Correct by next inspection.

3717-1-04.1(KK) / Food equipment - certification and classification.
Equipment not approved by a recognized testing agency. Observed a non-commercial Kitchen Aid mixer in use in the facility. When equipment no longer functions properly, replace with commercial grade.

3717-1-04(I) / Nonfood-contact surfaces - materials.
Nonfood-contact surfaces constructed of unapproved materials. Observed cardboard being used as a shelf liner under the upper shelf of the ingredient storage rack. Non-food contact surfaces shall be constructed of materials that are nonabsorbent, smooth and easily cleanable. Correct by next inspection.

3717-1-04.2(H)(1) / Temperature measuring devices - manual warewashing.
Manual warewashing temperature measuring device not readily accessible. Correct by next standard inspection.

3717-1-06.2(I)(3) / Lighting - intensity (50 FC)
Light intensity less than fifty foot candles in required areas. Lighting measured at 20 foot candles above the oven at the time of inspection due to burnt out light bulbs. Correct by next inspection.

Conducted and discussed inspection with owner Heidi. Facility has obtained a new commercial grade Avantco freezer; model #178A19FHC. Discussed date marking of opened milk for a maximum of seven days if held for more than 24 hours. Provided updated employee illness reporting agreement forms during inspection. Emailed inspection report.
