Critical Corrected During Inspection Improper cooling of TCS food. At time of inspection, PIC explained cooling process was to put cooked pasta in shallow pans and stick in refrigerator. CORRECTED, Inspector proided educational handout on proper cooling and explained process

Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. At time of inspection, Almond milk without datemarking observed in refrigerator that according to employee had been in cooler for several days CORRECTED, listed item voluntariily disposed of

3717-1-03.2(M) / Wiping cloths - use limitation.
Improper use and/or maintenance of wiping cloths. At time of inspection, wiping cloth solution measured at only 100 ppm of quaternary ammonia.

3717-1-03.2(K) / In-use utensils - between-use storage.
Corrected During Inspection In-use utensils improperly stored. At time of inspection, spatula and scooper observed stored on top of sneeze guard suject to sneeze, splash, dirt and dust with no employees in area CORRECTED, listed items were relocated under sneeze guard

Conducted inspection with PIC Beth Hutchinson; reviewed inspection findings with PIC. Risk Level III activities include: Cook/Hot Hold, Reheat bulk proportions no more than once every seven days. Menu today: sloppy joe, pre-cut tossed salad, canned fruit cocktail. Proper cooling handout and Cooling record chart provided to PIC
