Rest rooms maintained and supplied. Dumpsters maintained and closed. Hand wash acceptable, supplied and accessible. Observed excellent date marking. Date marking reference chart is posted and is compliance with Ohio Food Safety Code. Observed good stacking order in the walk in cooler. Raw shell eggs stored on lowest shelf. Food in storage protected from contamination. Working containers labeled. Wipe cloths stored in sanitizer between use. Soup and Mac and Cheese are heated in the rethermalizer. Six hour cooling process using an ice bath (4 hours). Temperatures monitored by the closing and opening managers. Reheat soup one cycle. Baking pans are rotated for deep cleaning. Pans are cleaned annually at some point in the rotation. Brewed tea is drained every 8 hours. Washed, rinsed and sanitized once per night. Coffee urns are drained and washed, rinsed and sanitized nightly. Observed proper hand washing and glove use by food employees. Observed proper hair restraints worn by food employees at unannounced inspection. There is always a manager on duty who is serve safe certified All temperatures acceptable. Overall maintenance of operation is excellent. No critical violations observed at inspection. |
