Critical Corrected During Inspection Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. Bucket of sanitizer solution under the make table at 0 ppm. Solution refilled and brought up to proper concentration of 200-400 ppm at the time of inspection.

Corrected During Inspection Improper use and/or maintenance of wiping cloths. Observed bucket of sanitizer solution stored on the floor.

Repeat Nonfood-contact surfaces constructed of unapproved materials. Observed rust spots where the paint was missing on the shelves in the make table cooler closest to the office.
