Critical Corrected During Inspection Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. Sanitizer bucket had below manufacturer recommended strength. PIC had all buckets re-made to correct standard at time of inspection.

3717-1-03.4(F)(1)(a) / Time/temperature controlled for safety food - hot holding.
Critical Corrected During Inspection TCS foods not being hot held at the proper temperature. Burritos on service line had an internal temperature of 118F to 122F. PIC voluntarily discarded 4 lbs of product.

Burritos in hot holding unit had internal temperature of 130F had been in unit less than an hour an a half. PIC had items rapidly reheated to above 165F and moved to another unit. PIC discontinued use of unit.

Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Beef broth and chicken broth being held in ice bath had an internal temperature of 50F for an undetermined amount of time. PIC voluntarily discarded approximately 3 quarts of broth.

Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Container of beef broth on shelf in walk in cooler was past labeled discard by date. PIC voluntarily discarded.

3717-1-03.2(D) / Food storage containers - identified with common name of food.
Working food containers not properly labeled. Bulk flour container in spice room was not labeled with common name. Please label.

Repeat Corrected During Inspection Food not protected from contamination. Personal items stored in 4 door freezer with food for service. PIC removed.

3717-1-04.8(G)(2) / Kitchenware and tableware - handling.
Corrected During Inspection Knives, forks and spoons that are not prewrapped improperly presented. Utensils in drawer next to 4 door freezer were not stored so that handles were not in contact with food contact surfaces. PIC had changed.

Corrected During Inspection Single-service and single-use articles not protected from contamination. Single use items along prep line were not covered or stored in an inverted manner. PIC had items inverted.

3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Corrected During Inspection Nonfood-contact surfaces not easily cleanable. Handle of bread knife in coffee corner was deteriorated, rendering it no longer smooth, durable and easily cleanable. PIC removed.

Corrected During Inspection Equipment components are not intact, tight or properly adjusted. Gasket on pizza prep cooler, saute table cooler and 3 door prep reach in cooler torn, please replace by next standard inspection.

Non-food contact surfaces of equipment are unclean.Shelving in dry good storage area had visible residue. Please clean.
