3717-1-04.4(N)(3)/Manual and mechanical warewashing equipment, chemical sanitization (quaternary ammonium) - temp., pH, concentration, and hardness Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. Quat sanitizer dispenser at the three compartment used to fill sanitizer buckets was dispensing sanitizer below 100 ppm at the time of inspection. Discussed using bleach water in sanitizer buckets until dispenser is repaired to dispense between 200 and 400 ppm. Facility has bleach available and PIC created a work order for repair of the dispenser at the time of inspection. Correct by: 4/11/2022.
