Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Observed visible residue on the blade of the can opener. PIC had cleaned at time of inspection.

Critical Repeat Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Observed a knife with visible green staining, and several pitchers with visible staining. PIC discontinued use of knife and pitchers at time of inspection.

Critical Corrected During Inspection TCS foods not being hot held at the proper temperature. Observed 2 eggs in the hot holding cabinet next to ovens to have an internal temperature of 110-114F. PIC voluntarily discarded at time of inspection.

Non-durable equipment observed. Observed torn door flaps in the bakery freezer, rendering the surfaces no longer smooth, durable, non-absorbent, or easily cleanable. Repair/replace by next standard inspection.

Nonfood-contact surfaces not easily cleanable. Observed tape on the microphone next to the soup wells,rendering them no longer smooth, durable, non-abosorbent, or easily cleanable. Correct by 11/27/2023.

Non-durable equipment observed. Observed side door of the turbo cooler to fall off the unit, and is taped shut. Ensure all equipment is in proper working order by next standard inspection.

Fixed equipment not properly sealed or spaced for cleaning. Observed caulking behind the warewashing area to be cracked, peeling, and smooth or easily cleanable. Also observed visible residue on the caulking. Correct by next standard inspection.

Corrected During Inspection Non-food contact surfaces of equipment are unclean. Observed the container holding cleaned utensils in the bakery area to have visible residue. PIC sent everything and the container to be cleaned at time of inspection.

Plumbing fixtures unclean. Observed the spray nozzle near the dishwasher to have visible residue. PIC stated there is a plan in place to replace the nozzle. Correct by next standard inspection.

Storage areas, enclosures, and receptacles for refuse, recyclables, or returnables not maintained in good repair. Observed food waste dumpster to be completely cracked and open at the bottom on the same side as the drain plug. Correct by next standard inspection.
