Critical Corrected During Inspection Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. Bucket of quat sanitizer solution at 150 ppm. PIC refilled sanitizer and brought to 400 ppm at the time of inspection.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Repeat Corrected During Inspection TCS foods not being cold held at the proper temperature. Slice of ham in the top of the make table cooler at 51-52*F. PIC voluntarily discarded ham at the time of inspection.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Package of hot dogs opened the day before were not date marked. PIC date marked hot dogs for a total of seven days at the time of inspection.

Critical Corrected During Inspection Working containers of poisonous or toxic materials not properly labeled. Observed a spray bottle of kitchen cleaner that was not labeled. PIC labeled bottle at the time of inspection.

3717-1-03.2(M) / Wiping cloths - use limitation.
Corrected During Inspection Improper use and/or maintenance of wiping cloths. Wet wiping cloths setting on the make line counter. PIC placed cloths in a sanitizer solution at the time of inspection.

3717-1-04.8(E)(3) / Single-service articles and single-use articles - storage.
Corrected During Inspection Single-service and single-use articles not protected from contamination. Observed unprotected coffee filters stored on top of the coffee machine. PIC placed coffee filters in a clean plastic bag at the time of inspection.

Repeat Non-food contact surface(s) not cleaned at the required frequency. Observed a build-up of ice inside of the ice cream freezer. Correct by next inspection.

Corrected During Inspection Non-food contact surface(s) not cleaned at the required frequency. Observed residue on top of the knife holder in the kitchen. PIC cleaned at the time of inspection.

Physical facilities not maintained in good repair. Observed the wall panels loose by the back prep sink and by the front server's cooler. Correct by next inspection.
