3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Repeat Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed dog treats on shelf above equipment and foods for service by the drive thru window. PIC moved dog treats to acceptable location at time of inspection.

3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.
Critical Repeat Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Observed visible residue on the can opener blade and the scissors blade. Ensure scissors are easily separable for easy cleaning. Both items were sent to the warewashing unit at time of inspection.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed shredded chicken and barbecue chicken to not have a datemark in the sandwich prep cooler. Ensure all prepared food items held in the facility not in original packaging for more than 24 hours is date marked. PIC verified both items were prepped 2 days prior and datemarked both at time of inspection.

3717-1-06.4(K) / Controlling pests.
Critical Presence of rodents. Observed rodent droppings in the back hot water tank storage closet. Completely remove all evidence of pests, contact a licensed pest control provider, and thoroughly clean the area by reinspection 2/23/2023

3717-1-04.4(A)(3) / Equipment - cutting or piercing parts of can opener not maintained.
Repeat Corrected During Inspection Can opener blade dull or creating metal fragments. Observed metal fragments on the can opener rendering the blade dull, also observed chip in side of blade. Ensure blades are visually inspected to avoid metal fragment contamination. PIC discontinued use of can opener at time of inspection.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Corrected During Inspection Non-food contact surfaces of equipment are unclean. Observed floor of walk-in cooler under the caramel containers to have sticky residue. PIC had cleaned at time of inspection.

3717-1-06.4(A) / Repairing.
Repeat Physical facilities not maintained in good repair. Observed various areas of the floor deteriorating so the surfaces are rendering no longer smooth, durable, non-absorbent, and easily cleanable. PIC stated a plan is in place and contractors have been contacted since last inspection, yet are booked a year from now. Correct by next standard inspection.
