Critical Corrected During Inspection PIC unable to demonstrate knowledge of temperatures and times for safe refrigerated food storage, hot holding, cooling and reheating. PIC unable to state temperatures and time parameters for cooling food in bulk. Cooling logs provided at time of inspection.

Critical Corrected During Inspection PIC not ensuring employees are properly sanitizing equipment and utensils and monitoring of sanitizer parameters. Facility could not locate test strips for chlorine sanitizer and was not monitoring strength of mechanical warewashing unit. Education provided at time of inspection.

Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Raw shell eggs stored above ready to eat food. PIC moved at time of inspection to below ready to eat foods.

Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Soda dispenser storage cup had standing liquid in it. PIC removed dispenser from cup.

Critical Corrected During Inspection Chlorine sanitizing solution at incorrect temperature and/or concentration. Mechanical warewashing unit had below 10PPM. PIC is using three compartment sin till repaired.. Service provider contacted at time of inspection.

Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Vegetable beef soup in walk in cooler with a date of 9/23 observed. PIC voluntarily discarded.

Critical Corrected During Inspection Improper storage of poisonous or toxic materials. Sanitizer spray stored above single use items and sauce. PIC moved.
