A thermometer to measure manual warewashing and sanitizing temperatures was not readily accessible.

Critical Corrected During Inspection A quaternary ammonium sanitizing solution did not meet the minimum requirements for temperature, concentration, and/or water hardness. Sanitizer water temperature was 120*F. Sanitizer read 400 PPM at the 3 compartment sink. PIC had the sanitizing sink refilled with 75*F water.
A quaternary ammonium sanitizing solution shall: (a) Have a minimum temperature of 75F,(b) Have a concentration as specified and as indicated by the manufacturer's use directions included in the labeling, (c) Be used only in water with 500 ppm (mg/l) hardness or less, or used in water having a hardness no greater than specified by the manufacturer's label.
3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.
Critical Corrected During Inspection Equipment food-contact surfaces or utensils are dirty. Cookie display case had food build-up.
To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch.
3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Corrected During Inspection Observed accumulation of soil residue on nonfood-contact surfaces of the catsup cup holder dispenser.
Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
3717-1-05.1(C)(1) / Handwashing sink - required water temperature
Observed a handwashing sink without water at the required temperature. The handwashing sink in the restrooms reach only 80*F.
To ensure proper cleaning of hands, a handwashing sink shall be equipped to provide water at a temperature of at least 100° F (thirty-eight degrees Celsius) through a mixing valve or combination faucet. Correct By: 20-Apr-2018

The plumbing system was not properly maintained. Drain for prep sink is plugged. PIC stated plumber has been called and will be here today.

Critical Corrected During Inspection Observed improper storage of poisonous or toxic materials. Chemical stored at the 3 compartment sink
To prevent contamination, poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils, linens, or single-service or single-use articles by: 1) Separating the poisonous materials by spacing or partitioning; and 2) Locating the poisonous or toxic materials in an area that is not above food, equipment, utensils, linens, single-service articles or single-use articles. .
