Critical Repeat Corrected During Inspection TCS foods not being hot held at the proper temperature. Observed recently prepared fried chicken in the warming cabinet at 125*F. PIC reheated chicken to 190*F at the time of inspection.

Critical Repeat Corrected During Inspection TCS foods not being hot held at the proper temperature. Observed honey chicken at 122*F and pizza at 128*F in the warming cabinet. PIC voluntarily discarded chicken and pizza at the time of inspection.

Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed a gallon of milk with an internal temperature of 47*F. PIC voluntarily discarded milk at the time of inspection.

Complaint on 11-Aug-2023 :
Discussed inspection with the manager. Walk-in cooler has been out for the past few weeks per PIC. Facility is currently in the process of repairing the walk-in cooler. Observed work order for repair of walk-in cooler at the time of inspection. No TCS foods were observed in the cooler at the time of inspection. Facility has not been accepting cold items since cooler has been down per PIC. Discussed unit may not be used for TCS food storage until it is holding at 41*F or below. Reach-in cooler being used to store the creamer cold holding at 41*F during inspection. Observed the thermometer inside the hot holding cabinet at 140*F during inspection. At the time of inspection, several foods inside the cabinet had internal temperatures below the minimum hot holding of 135*F. PIC placed work order to adjust hot holding cabinet temperature at the time of inspection. Items in the cabinet are kept for one or two hours and are tracked by a timer. Food is discarded once time has expired. Sausage on the roller grill 135*F at the time of inspection. Emailed inspection report.
