3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Baked goods observed beside coffee preparation area to not be in use and uncovered. PIC had items covered.

3717-1-04.5(B)(5) / Equipment food-contact surfaces and utensils - cleaning frequency.
Corrected During Inspection Utensils and equipment contacting non-TCS foods not cleaned at required. Ice scoop stored in contact with storage container that has visible residue. PIC removed from service and had washed rinsed and sanitized.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Repeat Corrected During Inspection TCS foods not being cold held at the proper temperature. Dairy cooler had ambient temperature of 55F. PIC voluntarily discarded one half gallon of organic soy milk internal temperature of 50F. one quart of skim milk internal temperature of 46F and one 13 oz container of dairy whipped topping. Items were above 41F for an undetermined amount of time. PIC discontinued use of unit for TCS items till it can hold internal temperatures of items at 41F or below.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Key lime baked goods that were made over 24 hours before were not date marked. pIC had items date marked at time of inspection.

3717-1-02.3(C) / Hair restraints - effectiveness.
Repeat Corrected During Inspection Food employee(s) not wearing a hair restraint. Employee working in coffee preparation area was not wearing hair restraint. Hair restraint obtained and used at time of inspection.

3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Nonfood-contact surfaces not easily cleanable. Drying rack above three compartment sink in bakery has deteriorated so that surface is no longer smooth, durable and easily cleanable. Please repair or replace by next standard inspection.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Facility not maintained clean. Floor and drain under ice bin in coffee preparation area has visible residue. Please clean by 03/22/22

3717-1-06.4(A) / Repairing.
Physical facilities not maintained in good repair. Paint on wood trim next to ice machine in bakery and on edge of shelf in coffee are has chipped. Please repair so surface is non adsorbent, smooth, durable and easily cleanable by next standard inspection.

Discussed the storage of clean plates, if overhead cover is not sufficient to protect clean items then items should be stored covered or inverted.
