Critical Corrected During Inspection Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. Sanitizer solution in the three compartment sink was below 200 ppm. PIC drained and refilled solution to a concentration above 200 ppm at the time of inspection.

Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Container of sliced american cheese in the pizza make table did not have a date mark. PIC voluntarily discarded cheese at the time of inspection.
