Person in Charge - Tim Day is serve safe certified.

Employee Health policy is exclusion of any ill employee. Reviewed the reporting requirements per the Ohio Food Safety Code for employee illness. FDA Employee Health Guide provided.

No raw or undercooked foods are offered. Eggs are offered sunny side up but are pasteurized.

All foods are from a commercial supplier - US Foods.

Observed proper thawing under refrigeration in the walk in cooler.

Observed excellent date marking in the walk in cooler Date marking system includes a color coded day/date system and writable date marking stickers.

Observed use of a chill wand to cool soup. Also using reduced volume and ice bath when cooling steam ship round. . Temperatures are monitored and recorded during cooling.

PIC stated he calibrates thermometers once per week and was able to site the correct method.

Chemicals are segregated in a utility room and are properly labeled.

Food is not transported off site.

No violations observed..
