Critical PIC did not ensure employees are proplerly maintaining temperatures of TCS foods during hot and cold storage. During inspection, food was not being monitored for proper hot holding CORRECTED, instruction given to PIC on procedures to maintain hot holding tempertures in compliance

3717-1-03.4(F)(1)(a) / Time/temperature controlled for safety food - hot holding.
Critical Corrected During Inspection TCS foods not being hot held at the proper temperature. During inspection, chicken sandwich measured at 126 degrees F. CORRECTED, hot holding steam table was using shallow pans and replaced with deep pans.

3717-1-04.4(Q)(2) / Utensils, temperature and pressure measuring devices - good repair and calibration.
Utensils, thermometers, and/or pressure gauges not in good repair or calibrated. During inspection, blodgett oven gauge was not calibrated, with desired temperature at 350 degrees F and actual temperature at 357 degrees F
Please calibrate all equipment

Nonfood-contact surfaces not easily cleanable. During inspection, cart observed in use that was dented and no longer smooth and cleanable
Please replace or repair equipment to maintain a smooth surface
3717-1-04.2(I) / Sanitizing solutions - testing devices.
Corrected During Inspection No sanitizer test kit available. During inspection, sanitizer test strips in use were observed expired. CORRECTED, test strips replaced with current strips

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Non-food contact surface(s) not cleaned at the required frequency. During inspection, ice build up observed in center True two door freezer in dining area in back of interior.
Please thaw equipment, repair leak, and clean condenser line
3717-1-05.1(S) / Plumbing system - maintained in good repair.
Plumbing system not properly maintained or repaired. During inspection, drain of garbage disposal compartment of three compartment sink was not draining properly
Please repair drain and maintain
3701-21-25(I) / Person in charge certification in food protection
Repeat FSO did not have a person in charge per shift with the person in charge certification in food protection.
Please provide record of successful completion of food safety course for employees on shift.
Comments
Conducted inspection with PIC; reviewed inspection report with PIC. Risk Level 3 activities included : Cook/Serve. Menu consisted of chicken sandwich (hot hold), prepackaged pretzels, humus, canned pineapple, pasteurized dairy milk. Plastic tableware in use. Proper hot holding above 135 degrees F discussed. Education handout given on food temperatures Steam table glass sneeze guard should extend to counter surface to prevent steam going into eyes of students and to allow for correct use of steam table for hot holding food.
