Non-food contact surfaces of equipment are unclean. -Observed non-food contact surfaces which had accumulation of food debris; special attention to lower shelves of prep tables and cabinets, as well as corners and seams of equipment where dirt tends to accumulate.

Commercial Norovirus bodily fluid clean up kit present.
Bodily fluid spill written procedure present.

-Observed a green cutting board which is showing signs of wear and tear; consider replacement.

*Knives are put into container of sanitizer water on back prep line counter after each single use. PIC states this is to encourage employees to get a fresh one for each customer.
Knives held in sanitizer are not re-used before being properly washed, rinsed, sanitized, and air-dried per PIC.
