Employee reporting illness agreement is covered under orientation packets and available on site.

Did not observe any discharge from eyes, nose or throat from any employees.

Employees do not touch foods with bare hands, use single use gloves and utensils.

IV / Demonstration of Knowledge
PIC has level 2 certification, able to demonstrate knowledge with answering questions correctly, but had 2 critical violations occurring during inspection.

IX / Highly Susceptible Populations
Facility serves highly susceptible population. Use of pasteurized eggs for to order are used. Un-pasteurized eggs are used properly within baked goods. Foods are all cooked to minimal of 165*F, PIC stating around 180*F.

All foods come from an approved source: GFS & Borden's Dairy.

All TCS foods were within proper parameters.
