Critical Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. Observed less than 200 ppm, Quat solution.

Cutting blocks or boards cannot be effectively cleaned and sanitized. Observed cutting block with deep scores.
Action: Resurface/replace cutting block to easily clean surface.
3717-1-04.2(I) / Sanitizing solutions - testing devices.
No sanitizer test kit available. Observed test papers were outdated and appear to have been damp.
Action: Replace Immediately to properly test sanitizing water. Correct By: 20-Oct-2020
3717-1-06.4(F) / Drying mops.
Mops dried improperly. Observed wet mop stored in bucket.
Action: Mops shall be stored in a position to an allow and air dry between use.

RFE does not comply with Level One Certification requirements. Observed no Person in Charge with proper food service training.
