Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. -Observed a build-up of old milk residue on the food contact surface of the espresso machine. PIC properly cleaned and sanitized. -Observed brown and orange residue in the slushy machine nozzles. PIC stated this machine will not be used again until the fall and stated she will properly clean and sanitize. |

Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. -Observed and opened gallon of milk with no proper date mark. PIC voluntarily discarded one gallon of milk. |

Corrected During Inspection Inadequate equipment available for cooling, heating or holding food. -Observed a Beverage Air cooler with cheese being cold held inside. Equipment label states "For the storage and/or display of prepackaged or bottled beverages only." PIC moved cheese to front display cooler. |
