Non-food contact surfaces of equipment are dirty. Observed: Cooking sheets-trays are well encrusted and hard to clean in bakery.
Nonfood-contact surfaces of equipment shall be kept clean. Action: Clean or replace trays.
3717-1-06.1(A) / Floors, walls, and ceilings.
Floors, walls, and/or ceilings were not smooth and easily cleanable. Observed ceiling tile that has porous indentations above Sushi Preparation area.
Floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable. ACTION: Ceiling tile above food preparation area's shall be non porous and easy to clean.

Repeat Observed a build-up of dust and debris. Observation: Observed dust/dirt in deli (Chicken Preparation area) around wall and ceiling ventilation.

Observed a build-up of dirt and debris. Observed dirty appearance around hand sinks in deli bakery.

Observed mops being dried using an unapproved method. Observation: Wet mop are stored in bucket.
After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. Action: Wet mops shall be stored in a position to allow and air dry between use.
