Corrected During Inspection Employee eating, drinking, or using tobacco in non-designated area. Observed employee lunches setting on the prep table. PIC moved lunches to the office area at the time of inspection.

Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed a tray of croutons that were not covered to protect from contamination. PIC placed croutons in a plastic container at the time of inspection.

Critical Repeat Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed a container of sausage in the make line cooler that was not date marked. PIC added date sticker to sausage container at the time of inspection.

Improper storage of food items. Observed tubs of sauce setting on the floor inside the walk-in cooler. PIC placed sauce tubs on the shelf at the time of inspection.
