| 3717-1-06.4(B) / Cleaning - frequency and restrictions. Repeat Observed a build-up of dirt and debris. Observed a build-up of dirt and debris throughout entire facility. Entire facility floor is dirty & is not being cleaned on a regular schedule. To prevent the contamination of food/food equipment the facilty shall be cleaned on a regular basis to prevent a foodborne illness. The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.  |
