3717-1-05.1(C)(1) / Handwashing sink - required water temperature
Repeat Handwashing sink water below 100°F. Observed 70 degree water at hand sink located in the Deli(Chicken Prep).
Action: Correct hot water temperature to reach 100 degrees.
3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Equipment components are not intact, tight or properly adjusted. Observed lower portion of walk-in cooler door, located in Produce, to have gasket and door trim torn/mangled. .
Action: Fix door, replace gasket to provide proper seal.
3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Corrected During Inspection Non-food contact surfaces of equipment are unclean. Observed ice bin for used for display/seafood, to have mildew residue on inner tray.

Action Taken: PIC had machine cleaned.

Critical Water under pressure is not available to all fixtures as required. Observed no hot water pressure located at the hand sink (Chicken Preparation Area).
Action: Correct water pressure ASAP.

Repeat Physical facilities not maintained in good repair. Observed cooler door skin torn, located in meat dept.
Action: Fix door skin to provide a safe, easy to clean surface.

Repeat Facility not maintained clean. Observed debris around hand sink/three compartment on floor in produce area.
Action: Routinely maintain floor to prevent build-up.

Action: Clean on frequent basis to prevent build-up.

Food process reviewed: Sushi, checked calibration of probe and reviewed the process for acidification of white rice.
