Cooking and/or baking equipment not cleaned when required. Observed visible dried residue on interior surfaces of microwave in deli area. Thoroughly clean interior surfaces of microwave. -Correct by 8-22-23.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed TCS foods in produce end cap cooler held above 41*F for an undetermined amount of time. Philly cheese calzone (43*F) x 3, chicken pot pie (42*F) x 1, marketside breakfast pizza (45*F) x 2, marketside five cheese pizza (42*F) x 1, marketside pepperoni pizza (42*F) x 1. PIC voluntarily discarded listed foods at time of inspection.

Critical Repeat Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed chub of pepperjack cheese date marked incorrectly for 21 days. Observed date chub was open to be 8-14-23 and PIC corrected discard date on sticker to indicate consumption or discard within 7 days total at time of inspection. Also discussed ensuring that deli meats sliced and packaged for discount and placed in retail cooler retain original date that the chub was opened. Observed packages of discounted meat and cheese to display the date the meat\cheese was sliced and not the actual date that the chub was opened. PIC did pull packages from retail cooler to properly record date at time of inspection.

Critical Presence of live insects, rodents, and other pests. At time of inspection, observed multiple flying insects in various areas throughout facility (bakery, deli, mop sink near grocery receiving area). PIC states facility does have a monthly maintenance program with a licensed pest control company and observed last pest control report to indicate no findings from 8/1/23. Discussed reaching out to pest control company regarding treatment for observed pests currently. -Correct by 8-22-23.

Nonfood-contact surfaces not easily cleanable. Observed stock carts in walk in meat cooler to contain rust and no longer easily cleanable. Resurface or replace carts. -Correct by next standard inspection.

Non-food contact surfaces of equipment are unclean. Observed visible grease\residue build up on portable drain hose for fryers. Throughout clean hose. -Correct by 8-22-23.

At time of inspection, observed some progress as some racks and baking sheets have been replaced and\or thoroughly cleaned. Thoroughly clean remaining racks to remove visible carbon/burnt build up by next standard inspection.

Repeat Facility not maintained clean. Observed fan guards on condensers in deli walk in cooler and walk in produce cooler to contain visible dust accumulation and in need of greater cleaning. Thoroughly clean fan guards. -Correct by 8-22-23.

Corrected During Inspection Facility not maintained clean. Observed visible spillage on shelving for sour cream in retail area. PIC had shelving cleaned at time of inspection.

Thoroughly clean floors with special attention to retail aisles for chips, flour\sugar area, dairy walk in cooler, deli walk in cooler, and areas where standing water is observed from condensation drippage. PIC did have areas of the floors near the chips and flour\sugar retail areas cleaned\corrected at time of inspection. -Correct by 8/22/23.

Corrected During Inspection Mops dried improperly. At time of inspection, observed mop not stored in a manner to air dry. PIC placed mop in a position to air dry at time of inspection.

Physical facilities not maintained in good repair. Observed hole in wall of ship from store area. Repair hole and ensure surface is easily cleanable. -Correct by next standard inspection.

Observed visible condensation build up on multiple retail coolers, cooler\freezers doors, and water from condensation on floors throughout the facility. PIC states a work order has been placed regarding the issue. Discussed continuing to ensure condensation is cleaned up and food is not stored directly under drippage, as well as monitoring coolers closely until issue if resolved. -Correct by 8-22-23.

Comments
Inspection conducted and reviewed with leads/managers, as well as EHS from RPH. Risk level 3 activities include cooking, hot holding, and cooling TCS foods, slicing of ready to eat meats/cheeses. Inspection report emailed.
