3717-1-04.1(A) / Equipment and utensils - durability and strength.
Non-durable equipment observed. Observed dish washing machine that is unusable due to the machine unable to be turned on without tripping the electrical breaker. Facility is to use the 3 compartment sink for dishwashing until dishwashing machine can be operated as intended. Repair or remove from facility by next standard inspection.

3717-1-04.1(A) / Equipment and utensils - durability and strength.
Repeat Non-durable equipment observed. Observed front panel of front produce cooler to be missing. PIC stated the part is on order and should be arriving soon. Repair by next standard inspection.

3717-1-04.4(B) / Cutting surfaces.
Repeat Cutting blocks or boards cannot be effectively cleaned and sanitized. Observed scoring and staining on the cutting boards on the front sandwich making line. PIC stated a plan is in place to resurface the cutting boards. Resurface by next standard inspection.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed roof (where nozzle connects to machine) of coke freestyle machine to have visible sticky residue. Clean by 3/24/2023.

Non-food contact surfaces of equipment are unclean. Observed cabinets that hold paper towels to have crumb accumulation in the door. Clean by 3/24/2023.

Non-food contact surfaces of equipment are unclean. Observed spray nozzle of the 3 compartment sink to have visible residue. PIC stated nozzle is cleaned once every two weeks. Increase cleaning frequency to ensure nozzle is clean. Clean by 3/24/2023.

Non-food contact surfaces of equipment are unclean. Observed visible residue on the outside of the bread proofer in the walk-in cooler. Clean by 3/24/2023.

3717-1-06.2(I)(3) / Lighting - intensity (50 FC)
Repeat Light intensity less than fifty foot candles in required areas. Observed 43 candle foot power (CFP) on the front sandwich serving line, and 21 at the ovens. Ensure both areas have a light intensity of at least 50 CFP in areas with machinery, cooking units, and areas where knives are used. PIC stated the lighting unit has come in, but a contractor has yet to arrive to install the lighting. Correct by next standard inspection.

Repeat Light intensity less than ten foot candles in required areas. Observed 1 candle foot power (CFP) in the walk-in freezer. Ensure the light intensity for the walk-in freezer is at least 10 CFP. Correct by next standard inspection.
