I / Employee Health PIC stating they have an employee reporting illness agreement and have them signed, but signed copies are at the Municipal Building. Ensure copies are available at facility. PIC will scan copies to Sanitarian. |
II / Good Hygienic Practices Observed coffee cup with coffee in it at warewashing area. If drinking, a proper cup with lid and straw. Or else keep personal beverages away from food areas. |
III / Preventing Contamination by Hand Handwashing stations were properly stocked with soap, paper towels, running hot and cold water, and proper signage. |
IV / Demonstration of Knowledge PIC is Level 2 ServSafe Certified. Was able to answer questions regarding food safety correctly. |
IX / Highly Susceptible Populations Highly susceptible population served for lunches. Unpasteurized eggs for cake mix purposes only. Do not serve undercooked or raw products. Use unpasteurized eggs for any egg dishes. |
V / Food from Approved Source All foods come from an approved source: GFS, Kroger, Walmart, etc. |
VI / Time/Temperature Controlled Safety Food For serving purposes; facility was sitting coleslaw, veg mix and sliced melons over ice packs, but was insufficient to keep TCS foods at 41*F or below. Observed pre-portioned salad sitting on counter for serving purposes. |
VII / Protection from Contamination All foods were properly segregated, covered and stored throughout facility. |
X / Chemical Chemical storage and use was proper. |
