3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Corrected During Inspection Ready-to-eat, TCS food that had been date marked was not properly discarded when required. Observed noodles with discard by 11/17/18 EOD.
To prevent illness, refrigerated, ready-to-eat TCS food that has been date marked in the facility shall be discarded if it: (a) exceeds the temperature or time specified in (G)(1) of this rule, except the time the food is frozen; (b) is in a container or package that does not bear a date or day; or (c) is marked with a date or day that exceeds the time and temperature combination specified in (G)(1) of this rule. PIC voluntarily destroyed 2lbs of noodles.
3717-1-04.2(I) / Sanitizing solutions - testing devices.
There is no test kit available for measuring the concentration of the sanitizer. Facility sing quat for sani buckets without test strips.
To ensure proper sanitization, a test kit or other device that accurately measures the concentration in PPM (mg/L) of sanitizing solutions shall be provided. Obtain quat test strips to monitor concentration. Went over proper concentration according to bottle 200-400PPM.
3717-1-04.4(D) / Warewashing equipment - cleaning frequency.
The warewashing equipment and/or components were not cleaned at the required frequency. Observed presence of hard water on insides.
A warewashing machine, the compartments of sinks, basins, or other receptacles used for washing and rinsing equipment, utensils, or raw foods, or laundering wiping cloths; and drainboards or other equipment used to substitute for drainboards, shall be cleaned as specified in this rule. Instructed PIC to delyme inside.
3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are dirty. Observed top of ice bin near drive through to contain mold, not in direct contact with ice.
Nonfood-contact surfaces of equipment shall be kept clean. Ensure ice bin is properly washed, rinsed and sanitized to remove mold.
3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Observed accumulation of soil residue on nonfood-contact surfaces. Observed bottom to warmer to have an accumulation of grease, PIC stating not in use.
Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. If no longer using ensure it is removed from facility or else keep in a cleanly condition.

Observed accumulation of soil residue on nonfood-contact surfaces. Observed seal to Beverage Air reach-in cooler near drive through to contain food residue accumulation.
Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Ensure seals to coolers are properly cleaned.
3717-1-06.4(H) / Cleaning and maintenance of plumbing fixtures.
Observed plumbing fixtures that were not being kept clean and maintained. Observed floor drain near tilting boilers to contain brown residue accumulation along with drain under fryers containing an accumulation of grease.
Plumbing fixtures such as handwashing sinks, toilets, and urinals shall be cleaned as often as necessary to keep them clean and maintained. Ensure drains are properly cleaned to remove grease and brown residue.
