3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding. Critical (CORRECTED DURING INSPECTION) TCS foods not being cold held at the proper temperature.
-Observed TCS foods in the long pizza prep cooler to be above maximum allowed safe cold holding temperature of 41*F or below. Facility opens at 10:30 AM, PIC states the prep cooler was filled from the walk-in at 10:15 AM by himself personally. Time of inspection was 1:00 PM. PIC will follow a four (4) hour time limit for all TCS foods in prep cooler until scheduled maintenance can be performed. Any remaining foods shall be discarded after this time limit has been reached.
