3717-1-03.1(L) / Package integrity - specifications for receiving
Corrected During Inspection Observed food in packaging that does not appear to protect it from contamination. Observed 1 dented Hanwich can, 1 dented green bean can, 5 dented creamed corn cans, and 4 dented tuna cans that were dented around top or bottom seals.
To prevent adulteration, food packages shall be in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants. Educated PIC on proper inspection of cans due to C. botulism resulting and the preventitive measures to take when visually inspecting dented cans. Manager pulled all compromised cans from sale.
3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Observed accumulation of soil residue on nonfood-contact surfaces. -Observed sticky yellow substances on white shelving in true refrigerators holding milk. -Observed the tracks in the self-service beverage coolers by the register to be dirty and need cleaned.
Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Instructed PIC to clean areas needed. Correct by next inspection.
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed a build-up of dirt and debris. Observed flooring in the store especially in bathrooms and mop sink are to be dirty and need cleaned. Also around coving throughout store.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. Instructed PIC to pay close attention to these areas when mopping the store. Correct by next inspection.
