Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Open partially consumed drink above food for service in walk in cooler. PIC moved.

Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Bulk ice machine in back had visible residue on ice contact surfaces in ice production area. PIC removed from use at time of inspection to have serviced.

Repeat Corrected During Inspection Food employee(s) not wearing a hair restraint. Employee observed filling fry containers with out hair restraint. PIC provided and employee donned hat.

3717-1-04.4(A)(3) / Equipment - cutting or piercing parts of can opener not maintained.
Corrected During Inspection Can opener blade dull or creating metal fragments. PIC removed from service to replace blade.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Hoses under suppression system by fryer have visible residue. Please clean by re-inspection.

3717-1-05.1(D) / Backflow prevention - air gap.
Critical Corrected During Inspection Insufficient air gap between the flood rim and the water supply inlet. Hose from soda dispensers in side of funnel to drain. PIC had drain lines moved.

Corrected During Inspection Outdoor refuse containers without tight fitting lids, doors, or covers. Dumpster lid observed open and not in service.

Conducted and reviewed with Manager Wes Stevens.
Reviewed the process for cooking burgers and using time in place of temperature on cheese.
Floor in paper goods storage area is beginning to deteriorate and will need repaired when surface is no longer smooth, durable and easily cleanable.
Discussed the importance of using the provided storage areas for personal items.

VI - P - TCS Food: Observed food employee cooling cooked time/temperature controlled for safety foods from 135°F to 70°F within two hours and from 70°F to 41°F or below within four hours.
