Critical Corrected During Inspection PIC not ensuring employees are properly sanitizing equipment and utensils and monitoring of sanitizer parameters. Sanitizer strength in three compartment sink was 0PPM. PIC remade to strength of 200PPM. Facility is manually mixing till dispenser can be serviced.

3717-1-02.4(B)(2)(g) / PIC: Demonstration of Knowledge - Stating required temperatures and times for safe storage, holding, cooling, reheating of TCS food
Critical Corrected During Inspection PIC unable to demonstrate knowledge of temperatures and times for safe refrigerated food storage, hot holding, cooling and reheating. PIC unable to state correct cooling temperatures and times. Handout provided at time of inspection.

3717-1-04.4(N)(3) / Manual and mechanical warewashing equipment, chemical sanitization (quaternary ammonium) - temp., pH, concentration, and hardness
Critical Corrected During Inspection Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. Sanitizer in three compartment sink and buckets at 0PPM. PIC remade to correct strength.

Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Meat slicer had visible food residue on blade. PIC had item cleaned and sanitized at time of inspection.

3717-1-07(B) / Poisonous or toxic materials: Working containers - common name.
Critical Corrected During Inspection Working containers of poisonous or toxic materials not properly labeled. Spray bottle in shelf of cart in ware warewashing area was not labeled with common name. PIC had labeled at time of inspection.

Corrected During Inspection Food employee(s) not wearing a hair restraint. Employee observed with hair loos with just a hat. PIC had employee don hair restraint.

3717-1-04.2(I) / Sanitizing solutions - testing devices.
No sanitizer test kit available. No test kit available for purell sanitizer. Please obtain by next standard inspection.

Non-food contact surfaces of equipment are unclean. Exterior of pickle bucket in walk in cooler #2 has visible black build up. Please clean by 06/23/22

Light intensity less than fifty foot candles in required areas. Lighting above gas range and over meat slicer was not fifty foot candles at work surface. Please repair by next standard inspection.
