Critical Corrected During Inspection PIC unable to demonstrate knowledge of cleaning and sanitizing. When questioning PIC about warewashing procedures it was discovered that facility is skipping the rinse step of the warewashing procedures. Educated about proper wash, rinse, and sanitizing steps for warewashing. Provided in the report will be a warewashing poster for facilities education.

Critical Repeat Employees are not informed in a verifiable manner of their responsibility to report information about their health. Observed no employee illness forms accessible at time of inspection, due to being locked in the office. Have all required documentation mentioned in the comments readily accessible by follow up inspection 11-16-22.

Critical Corrected During Inspection Chlorine sanitizing solution at incorrect temperature and/or concentration. Observed mechanical dishwasher not dispersing the sanitizer. PIC discontinued use until the unit can be repaired or replaced. Manual warewashing in 3 compartment sink will be utilized. Correct by next standard inspection.

Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Observed visible residue on the tomato slicer. PIC had disassembled and rewashed at time of inspection.

3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Improper storage of food items. Observed cutting boards on the floor and not 6 inches off the ground. PIC informed that they are in storage. Correct by 11/10/2022.

3717-1-03.2(Y) / Miscellaneous sources of contamination.
Food not protected from contamination. Observed personal food items stored on top of the dough racks of the walk-in cooler. Move to bottom rack or in container by 11/10/2022.

Corrected During Inspection Clean equipment and utensils not stored in a self-draining position and covered or inverted. Observed slicing pan, black pans, and trays not inverted and protected from contamination. PIC had all items inverted at time of inspection.

Corrected During Inspection Re-use of single-service or single-use articles. Observed magic erasers being reused. PIC had magic erasers discarded at time of inspection.

3717-1-04.1(A) / Equipment and utensils - durability and strength.
Non-durable equipment observed. Observed bottom plate for the thermometer of the front produce cooler is be missing. PIC states that it was accidentally thrown away and there is an order in for it. Correct by next standard inspection.

Corrected During Inspection Non-durable equipment observed. Observed rubber piece with visible residue falling off of microwave. PIC removed rubber at time of inspection.

Nonfood-contact surfaces not easily cleanable. Observed film on the surface of the cooler under the Kerig, rendering the surface no longer smooth, durable, and easily cleanable. Removed by 11/10/2022.

Equipment not approved by a recognized testing agency. Observed new Kerig machine in the front line. No commercial grade marking were observed. PIC unable to provide information/specification sheets at time of inspection. Provide information about the machine to Richland Public Health Department by 11/16/2022 or discontinue use of unit.

Cutting blocks or boards cannot be effectively cleaned and sanitized. Observed tomato slicer cutting board to be overly scored and stained rendering the surface no longer smooth, durable, and easily cleanable. Resurface or replace by 11/16/2022.

3717-1-04.1(C) / Food-contact surfaces - cleanability
Critical Corrected During Inspection Food contact surfaces not easily cleanable. Observed numerous pairs of scissors throughout the facility used for opening food packages that were not able to be taken apart and easily cleaned. Instructed PIC not to use scissors to use these scissors to open food package and may only be used to open non-food materials and packages. Replace existing scissor with appropriate pair for food contact surfaces by 11/15/2022.

Non-food contact surface(s) not cleaned at the required frequency. Observed mop sink to have an accumulation of visible residue. Correct by 11/16/2022.

Corrected During Inspection Non-food contact surfaces of equipment are unclean. Observed the utensil holders in the warewashing area to be full of build-up residue. PIC placed the holders in the wash.

Repeat Non-food contact surface(s) not cleaned at the required frequency. Observed soda residue on the top of the soda machine (dispensing nozzels for soda and ice), and the cabinet under the soda machine. Correct by 11/16/2022

Light intensity less than fifty foot candles in required areas. Observed 44 Candle Foot Power on the serving line, 21 CFP at the ovens Candle Foot Power in the freezer. The light intensity of the food preparation areas should be at least 50 CFP. Correct by next standard inspection.
