Cooking and/or baking equipment not cleaned when required. Observed upper interior surface of microwave in back prep are to have visible dried residue. Clean upper interior portion of microwave. -Correct by 3-30-23

3717-1-03.4(F)(2) / Time/temperature controlled for safety food - cold holding of eggs
Critical Corrected During Inspection (REPEAT) Raw shell eggs not maintained at 45° F or below. Observed raw shell eggs stored in top of small meat cooler by make lines to have internal temperature of 52*F. Also observed container of honey butter (TCS) on make line with internal temperature of 52*F. Employee voluntarily discarded eggs (2 eggs total) and honey butter during inspection. Ensure raw shell eggs are held at 45* or below and other refrigerated TCS foods are held at 41*F or below.

3717-1-03.4(C) / Thawing - temperature and time control.
Corrected During Inspection TCS foods not properly thawed. Observed bag of frozen potato wedges stored in cabinet below fryer and outside of temperature control. Ambient air temperature in cabinet observed at 63*F and internal temperature of potato wedges observed at 30*F. PIC placed potato edges in fryer to cook at time of inspection. Ensure food is returned to freezer or thawed under proper thawing parameters.

Corrected During Inspection [51] Improper storage of cleaned equipment, utensils, and laundered linens. Observed clean insulated pitchers hanging on splash guard of 3 compartment sink, exposed to potential splash from hand washing sink. GM moved pitchers to 3 compartment sink area during inspection.

3717-1-04.1(C) / Food-contact surfaces - cleanability
Critical Corrected During Inspection Food contact surfaces not easily cleanable. Observed scissors used to cut open bags of bacon not able to fully separate and come apart for cleanability. Replace with scissors that are fully able to disconnect/come apart. PIC states they are temporarily being used as previous pair went missing. States scissors will not be used and removed from service during inspection.

Fixed equipment not properly sealed or spaced for cleaning. Observed seal along top of ice bin around outer edges to be missing, creating a small gap that is not easily cleanable. Seal outer top edges of ice bin at drive through area to ensure surface is easily cleanable. -Correct by 4-5-23

Equipment components are not intact, tight or properly adjusted. Observed gaskets on multiple hot holding drawers along both make lines to be torn, broken and in disrepair. Repair gaskets to ensure hot holding equipment functions properly to maintain internal proper holding temperatures by next standard inspection.

Equipment components are not intact, tight or properly adjusted. Observed door gasket on outside walk in bun freezer to be torn and in disrepair. Replace door gasket by next standard inspection.

Nonfood-contact surfaces not easily cleanable. Observed plastic handle on metal tongs at griddle to be broken/cracked and no longer easily cleanable. Remove plastic covering or replace tongs to ensure easy cleanability. -Correct by 4/5/23.
