3717-1-03.2(M) / Wiping cloths - use limitation.
Observed improper use and/or maintenance of wiping cloths. At time of inspection, moist wiping cloth was observed outside bucket near food line
(2) Cloths that are in use for wiping counters and other equipment surfaces shall be: (a) held between uses in a chemical sanitizer of the appropriate concentration; and (b) shall be laundered daily;
3717-1-03.4(F)(1) / Time/temperature controlled for safety food - hot and cold holding.
Critical Corrected During Inspection TCS foods were not being held at the proper temperature. At time of inspectiion, potato hash browns on the servicing line did not meet minimum required holding temperatures: 127 degrees F CORRECTED, new potato hash browns brought in that were in compliance
To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except that roasts cooked using time and temperature parameters in 3717-1-03.3 may be held at 130° F), or at 41°F or less.
3717-1-04.8(E) / Equipment, utensils, linens, single-service articles, and single-use articles - storage.
Corrected During Inspection Cleaned equipment and utensils, laundered linens, or single-service and single-use articles are not properly stored. At time of inspection, single use styrofoam bowels were observed with food contact surface exposed to dirt, dust, and splash. CORRECTED, bowels on food line properly inverted
Cleaned equipment and utensils, laundered linens, single-service articles, and single-use articles shall be properly stored as described in this rule.
3717-1-05.1(L) / Handwashing sinks - location and placement.
Corrected During Inspection The Handwashing sink(s) are not located to allow convenient use by employees. At itme of inspection, access to hand washing sink was observed obstructed in the ware washing room with a garbage can and cart blocking access. CORRECTED, cart moved
To ensure frequent and proper handwashing, a handwashing sink shall be located to allow convenient use by employees in food preparation, food dispensing, and warewashing area, and in, or immediately adjacent to, toilet rooms.
3717-1-06.4(A) / Repairing.
The physical facilities are not being maintained in good repair. At time of inspection, Kolpak walk in freezer had residual ice near condenser line that appeared to be leaking
The physical facilities shall be maintained in good repair.
3717-1-06.4(F) / Drying mops.
Repeat Observed mops being dried using an unapproved method. At time of inspection, mop observed inside bucket while not in use
After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies.
