3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed the top layer of salami in the pizza make table at 45-46*F. PIC removed the top layer of salami at the time of inspection. Discussed fill levels on containers in the pizza make table cooler to maintain cold holding of products at 41*F or below.

3717-1-04.1(Y) / Temperature measuring devices.
Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable. No thermometer available in the pizza make table cooler. Correct by: 11/6/20.

3717-1-04.1(K) / Food temperature measuring devices - accuracy.
Critical Food thermometers are not accurate. Food thermometers were broken at the time of inspection. Replacements have been ordered and should be delivered on Thursday. Correct by: 11/6/20.

3717-1-04.8(E)(1) / Equipment, utensils, linens - storage.
Corrected During Inspection [51] Improper storage of cleaned equipment, utensils, and laundered linens. Observed knives stored in between the sub and pizza make coolers. Facility has ordered a magnetic strip to repair the knife holder. Discussed storing knives in a clean location until strip is obtained. PIC removed knives to be washed, rinsed, and sanitized at the time of inspection.

Repeat Nonfood-contact surfaces not easily cleanable. Observed a crack on the lid of the Rubbermaid flour container. Correct by next inspection.

Non-food contact surface(s) not cleaned at the required frequency. Observed a build-up of residue on the fans inside of the sub prep cooler, the dough cooler, and the Pepsi drink cooler. Correct by: 11/6/20.

Repeat Physical facilities not maintained in good repair. Observed loose floor tiles under the prep sink. Correct by next inspection.

Comments
Discussed inspection with Dave and Shawna. Discussed the wash water minimum of 110*F at the three compartment sink when dishes are actively being washed. Facility holds pizza sauce at room temperature for no more than 12 hours. Discussed obtaining paperwork from corporate regarding pizza sauce handling procedures. Provided updated employee illness reporting agreement form during inspection. Discussed having food employees sign form with COVID symptoms. Re-inspection to occur on Friday, November 6, 2020. Emailed inspection report.
