Critical PIC did not ensure employees are proplerly maintaining temperatures of TCS foods during hot and cold storage. During inspection, PIC did not take temperatures of ham sandwiches prior to putting them on the serving line.

Critical Corrected During Inspection Food equipment surfaces not cleaned at required frequency. During inspection, probe thermometer was observed used without first properly sanitizing thermometer. CORRECTED alcohol swabs retreived and used

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. During inspection, TCS ham and cheese sandwiches measured at 56 degrees F while on the serving line CORRECTED, sandwiches taken off serving line and relocated into freezer. Sandwiches were made less than two hours before

Utensils, thermometers, and/or pressure gauges not in good repair or calibrated. During inspection, True cooler gauge displayed 39 degrees F when actual temperature was 34 degrees F

Equipment components are not intact, tight or properly adjusted. During inspection, right door of True Cooler was observed with a gasket seal that was loose and in disrepair

Critical Corrected During Inspection Food contact surfaces not easily cleanable. During inspection, clean spatula in drawer observed with uneven edges that were not smooth and easilty cleanable CORRECTED, listed item voluntarily discarded

Repeat Non-food contact surface(s) not cleaned at the required frequency. During inspection, reach in freezer had ice build up observed around edges.
Please defrost equipment and clean all surfaces of interior freezer

Ventilation system not maintained. During inspection, hood over Hobart ware washer was observed with dirt and dust residue
Please schedule regular cleaning of all of the facility
Comments
Conducted inspection with PIC Kately Dekrell; reviewed inspection findings with PIC. Risk Level III activities include: Cook/Serve. PIC states food service does not have leftovers. Menu consisted of Ham & cheese sandwich, bagged chips, cooked apples (hot hold), cooked carrots (hot hold), pasteurized dairy milk. Recommend purchasing bags of ice or obtaining commercial ice maker with backflow prevention for cold holding purposes.
