3717-1-06.2(B) / Handwashing cleanser - availability.
Corrected During Inspection No soap at handwashing sink(s). Observed no soap at the handwashing sink in the warewashing area. Ensure all handwashing sinks are properly stocked at all times. PIC had stocked at time of inspection.

3717-1-06.2(C) / Handwashing sinks - hand drying provision.
Repeat Corrected During Inspection No towels or drying device at the handwashing sink(s). Observed no paper towels at the handwashing sink in the warewashing area. Ensure all handwashing sinks are properly stocked at all times. PIC had stocked at time of inspection.

3717-1-05.1(O)(2) / Using a handwashing sink - other uses prohibited.
Critical Corrected During Inspection Handwashing sink is being used for purposes other than handwashing. Observed handwashing sink in the warewashing area to be used as a trash can. Ensure nothing other than handwashing being done in any handwashing sink. PIC had all trash removed at time of inspection.

Handwashing sink water below 100°F. Observed handwashing sink at the front line to only reach 75F. Ensure handwashing sinks reach at least 100F. Richland county plumbing department has been made notified and will be in contact. Correct by reinspection 11/27/2023.

3717-1-04.5(B)(5) / Equipment food-contact surfaces and utensils - cleaning frequency.
Utensils and equipment contacting non-TCS foods not cleaned at required frequency. Observed the interior lip of the bulk ice machine to have visible residue. Clean by reinspection 11/27/2023.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed salad sitting on the serving line to be at 65F. PIC stated salads were made and sat out on counter for an extended period of time. Ensure salads are made then returned to temperature control before service. PIC voluntarily discarded 4 trays of premade salad at time of inspection.

3717-1-07.1(C) / Poisonous or toxic materials: Conditions of use.
Critical Corrected During Inspection Improper use of a poisonous or toxic substance. Observed wondercide fruit fly traps being used (bought and installed) by the facility. Chemicals in this product are not rated for kitchen use per the manufacture/EPA minimal risk pesticide list. PIC had all traps removed from facility at time of inspection.

Critical Presence of live insects. Observed small flying insects in the warewashing area. PIC stated pest control is on site once a week. Remove all evidence, obtain summary reports/invoices and contact pest control by reinspection 11/27/2023.

3717-1-04.4(A)(3) / Equipment - cutting or piercing parts of can opener not maintained.
Corrected During Inspection Can opener blade dull or creating metal fragments. Observed can opener to have metal shavings, rendering foods exposed to potential metal contamination. PIC removed from service until new blade can be obtained.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed the pipes leading to the condenser unit in the walk-in cooler to have excessive residue accumulation. Clean by reinspection 11/27/2023.

Critical Water under pressure is not available to all fixtures as required. Observed insufficient water pressure at the serving line handwashing sink. Richland county plumbing department has been made notified and will be in contact. Correct by reinspection 11/27/2023.

3717-1-06.4(H) / Cleaning and maintenance of plumbing fixtures.
Plumbing fixtures unclean. Observed drain under the prep sink to have visible residue. Clean by reinspection 11/27/2023.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Repeat Facility not maintained clean. Observed ceiling tiles lining the oven area and extending outward to be excessively stained/visible residue. PIC stated tiles are on an incremental replacement schedule. Clean/replace by next standard inspection.

3717-1-06.4(A) / Repairing.
Physical facilities not maintained in good repair. Observed the wall behind the warewashing machine to be caving in, leaving a gap between the coving and the wall. Also observed the grout to be missing or low behind/under the warewashing machine. PIC stated plans to repair. Correct by next standard inspection.
