Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Observed pesto mayo sauce prepared in the facility with a prep date of 10/7. PIC voluntarily discarded sauce at the time of inspection.

3717-1-03.2(Y) / Miscellaneous sources of contamination.
Corrected During Inspection Food not protected from contamination. Observed personal food stored on the top shelf above food for service inside the front cooler. PIC moved personal food to the bottom shelf inside the cooler at the time of inspection.

Discussed inspection with Jill. Discussed obtaining a list of ingredients for the donuts and muffins to keep on file in the cafe. Discussed labeling individual containers of soup in the grab n go cooler with ingredients or keeping in a cooler behind the counter. Discussed cooling from 135*F to 70*F or below in two hours or less and from 70*F to 41*F or below in four hours or less. Discussed cleaning (wash, rinse, sanitize, air dry) of utensils at room temperature at least every four hours. Cafe is open from 7:30 AM - 2:30 PM. Left an extra copy of RPH's employee illness reporting agreement form and ODH's application for manager certification in food protection. Emailed inspection report.
