Critical Repeat Corrected During Inspection PIC not ensuring employees are properly sanitizing equipment and utensils and monitoring of sanitizer parameters. Sanitizer strength on warewashing was 0PPM. PIC is utilizing sanitizer dip in three compartment sink till unit serviced.

3717-1-02.4(B)(2)(g) / PIC: Demonstration of Knowledge - Stating required temperatures and times for safe storage, holding, cooling, reheating of TCS food
Critical Corrected During Inspection PIC unable to demonstrate knowledge of temperatures and times for safe refrigerated food storage, hot holding, cooling and reheating. PIC unable to state times and temperatures for safe cooling. Hand out emailed to PIC.

Critical Corrected During Inspection PIC did not ensure employees are properly maintaining temperatures of TCS foods during hot and cold storage. Ambient temperature of walk in was 44F and internal temperatures were 43F-44F. PIC provided information temperature monitoring. PIC is to monitor walk in cooler and ensure it is able to hold internal temperatures of 41F and below.

Critical Repeat Corrected During Inspection Chlorine sanitizing solution at incorrect temperature and/or concentration. Sanitizer in warewashing machine tested at 0PPM. PIC to use sanitizer dip in three compartment sink till serviced so that its sanitizing solution is within parameters.

Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Ice scoop in dining room storage bin was stored in contact with standing water. PIC had surfaces washed rinsed and sanitized at time of inspection.

Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Walk in cooler had ambient temperature of 44F. At time of inspection. PIC adjusted so unit was at 41F ambient temperature. TCS items with internal temperature of 44F voluntarily discarded. See voluntary destruction form for amounts and items.

Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Thickener with discard date of 08/10/22 was observed in walk in cooler. PIC voluntarily discarded at time of inspection.

Critical Corrected During Inspection Food thermometers are not accurate. Probe thermometer at prep table was off by 10F. PIC removed from service at item of inspection.

Corrected During Inspection Food employee(s) not wearing a hair restraint. Employee in kitchen was not wearing a beard restraint. PIC had employee obtain and utilize at time of inspection.

Non-food contact surfaces of equipment are unclean. Shelving in cabinets in kitchen has visible debris. Please clean by reinspection.
