PIC placed in dish area to be properly cleaned and sanitized. |
3717-1-03.4(F)(1)(a) / Time/temperature controlled for safety food - hot holding. Critical Corrected During Inspection TCS foods not being hot held at the proper temperature. -Observed a bowl of broth setting at room temperature to be at 115*F. Employee stated the broth was made around 10:30am and was set on the counter to be served at lunch at 11:30am. Employee voluntarily discarded 1 bowl of broth. |

Discussed inspection with Nick, Dietary Manager. Copy of inspection report sent via email. Verbally discussed: -Ensure coffee filters remain covered. Initially observed coffee filters to not be covered, employee properly covered coffee filters without being prompted. Facility is a risk level IV due to cooling and reheating in bulk and serving a highly susceptible population. |
