Critical Corrected During Inspection PIC unable to demonstrate knowledge of temperatures and times for safe refrigerated food storage, hot holding, cooling and reheating. Observed PIC unable to demonstrate proper cooling and reheating times and temperatures. Education provided at time of inspection, also poster for cooling and reheating is included in emailed report.

3717-1-05.1(C)(1) / Handwashing sink - required water temperature
Handwashing sink water below 100°F. Observed temperatures in the men's rest-room to be 74F and the women's rest-room to be 98F. Ensure water temperatures in both rest-rooms to be at least 100F. Correct by reinspection 12/05/2022.

Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed no lids on the topping containers. PIC had covered at time of inspection.

Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Observed production build-up on the knives. PIC had knives cleaned at time of inspection.

Cooking and/or baking equipment not cleaned when required. Observed splash on the roof of the microwave in the lobby. Clean by reinspection 12/05/2022.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed the following items to be outside of appropriate temperatures for cold holding: 4 packages of cut fruits weighing 5 oz each, 5 containers of orange juice weighing 11.5 oz each, and 14 six-pans of sliced tomatoes. All items to be between the temperatures of 47F and 50F. PIC had all items voluntarily discarded at time of inspection.

Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable. Observed thermometers in various locations located in the coldest part of the coolers. Relocate thermometers to the warmest part of the coolers by end of day 11/29/2022.

Corrected During Inspection Working food containers not properly labeled. Observed no common name on the water bottle used for the griddle. PIC had labeled at time of inspection.

Food employee(s) not wearing a hair restraint. Observed no proper hair restraints in use at time of inspection. Hair restraints can take the form of hair bands, bandanas, hats, and hair nets accompanying complete restraint of hair. Correct by reinspection 12/05/2022.

Single-service and single-use articles not protected from contamination. Observed bowls, paper wraps, bagel plates, and plastic single service containers to not be inverted or protected from splash and dust. Cover or invert by end of day 11/29/2022.

Corrected During Inspection Single-service or single-use articles, kitchenware, or tableware not handled, displayed, or dispensed properly. Observed ladles hanging on wire rack to where the food contact portion is exposed to splash and dust. PIC had removed and washed at time of inspection.

Fixed equipment not properly sealed or spaced for cleaning. Observed caulking around the 3 compartment sink to have visible residue and to be peeling away from the wall. Correct by reinspection 12/05/2022.

Cutting blocks or boards cannot be effectively cleaned and sanitized. Observed several cutting boards throughout the facility to be scored and stained. Have replaced or resurfaced by next standard inspection.

Non-durable equipment observed. Observed front display cooler to be out of acceptable temperature range, 48F. Repair to where the cooler reliably holds at 41F or below or replace by reinspection 12/05/2022.

Non-food contact surfaces of equipment are unclean. Observed the upper plate of the soda machine and the ice shoot in the lobby to have dried splash residue. Clean by reinspection 12/05/2022.

Per Ohio Uniform Food Code, "An air gap... shall be at least twice the diameter of the water supply inlet and may not be less than one inch". Correct by reinspection 12/05/2022.
