3717-1-02.2(C) / Hands and arms: when to wash
Critical Repeat Food employee(s) did not wash hands in situations that specifically require them to do so. At time of inspection, PIC was observeed on phone and without washing hands, took temperature of fish with probe thermometer. Additionally, PIC was observed wiping tables off in dining area and then putting on gloves without first washing hands.
To prevent contamination, food employees shall clean their hands and exposed portions of their arms after switching between working with raw food and with ready to eat food; before donning gloves to initiate a task that involves working with food; and after other activities that contaminate the hands.
3717-1-02.4(C)(4) / Person in charge: duties - ensure food employees are effectively washing their hands
Critical Repeat The person in charge did not ensure that employees were effectively cleaning their hands as required. PIC observed not washing hands before putting on gloves. Additionally, PIC observed on phone before taking temperature of fish without washing hands.
To prevent contamination, the person in charge shall ensure that employees are effectively cleaning their hands, by routinely monitoring the employees' handwashing.
3717-1-04.4(A)(1) / Equipment - good repair and proper adjustment.
Equipment and/or components are not maintained in good working order. At time of inspection, Hobart freezer was leaking on the inside and functioning properly
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.
3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Repeat Non-food contact surfaces of equipment are dirty. At time of inspection, the red Cres Cor hot holding unit had appearance of grease on inside that needed cleaned
Nonfood-contact surfaces of equipment shall be kept clean.
3717-1-04.8(E) / Equipment, utensils, linens, single-service articles, and single-use articles - storage.
Cleaned equipment and utensils, laundered linens, or single-service and single-use articles are not properly stored At time of inspection, food trays with food contact surface exposed were observed on food line. Please properly invert trays when not in use by protecting food contact surface from dirt, dust and splash.
Cleaned equipment and utensils, laundered linens, single-service articles, and single-use articles shall be properly stored as described in this rule.
Comments
Three compartment sink being used has a hand wash sink. Sink did take over four minutes appoximately to heat up to 98 degrees for hand washing. Ware washer was not in use but was operational at time of inspection. This report was reviewed with PIC Kim Hand washing educational handout given to PIC
