3717-1-04.7(B) / Frequency of laundering - specifications.
Linens, cloth gloves, and wiping cloths were not properly laundered. Kitchen staff states that wipe cloths used for food contact surfaces in the food service are being laundered in the same load as the mop heads.
Linens, cloths, and cloth gloves shall be laundered as specified in this rule. Launder and properly dry wipe cloths in a separate load from mop heads that are used to clean the floors to prevent cross contamination of food contact surfaces. Correct immdediately.
3717-1-06.4(F) / Drying mops.
Observed mops being dried using an unapproved method. Observed mops stored in a bucket behind the door.
After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. To prevent soiling of walls, floors or other clean areas of the food service, store mops hung to dry in the mop sink area.
